These delicious Buffalo Chicken Taquitos with Baked Cheese Shells require only 7 simple ingredients.
With no corn or flour, they are absolutely Keto-friendly.

¼ cup Franks Red Hot Sauce
1 tablespoon butter, melted
1 cup shredded cooked chicken (Rotisserie from the store works great!)
1 cup sharp cheddar cheese
1 cup mozzarella cheese
½ cup Parmesan cheese
2 jalapenos, seeded and finely chopped
1. Preheat your oven to 400°F. For easy clean up, line a cookie sheet with parchment paper.
2. In a medium bowl combine hot sauce with melted butter. Add shredded chicken and mix until the chicken is coated. Place chicken in a baking dish and bake for 20 minutes, stirring halfway through. Allow them to cool for 10 minutes while you’re making the cheese shells.
3. In a large mixing bowl, combine cheddar, mozzarella, Parmesan and jalapenos. Divide the cheese mixture into 6-balls on the lined cookie sheet. Bake for 6-8 minutes until edges are golden brown.
4. Remove from oven and allow to cool for 1- 2 minutes. Using a spatula, gently flip the melted cheese over and place a few spoonfuls of the buffalo chicken on the edge of each shell. Quickly roll each one into a tight taquito before the cheese hardens.
These make a truly tasty lunch, dinner or appetizer.
